Granola Girl Bliss Bites

If you want to take Granola Girl “on the go”, here’s a great recipe for a portable snack or super healthy wheat-free dessert! Bonus: it’s a no-bake treat.

1. peel and cube 2 large yams. Bake in the oven until very soft and let it cool.

2. mash with a potato masher or puree until smooth.

3. add 1 tablespoon cinnamon, 1 teaspoon of vanilla, sweeten to taste with agave or maple syrup, and add enough granola until you can form golf-ball size bites with your hands (pack it tightly!)

4. roll in dried coconut.

5. keep refrigerated until ready to consume. these freeze nicely too!
